These broken pieces of small truffles offer a light aroma. They are ideal to use in sauces, scrambled eggs, and in stuffings.
Maison Gaillard is located in the Quercy area of the South West of France, an hour drive north from Toulouse. Today, the truffle house is run by Jean-Luc Clamens, who learned his skills from Simone Gaillard whose family established the business in 1906. Every year, Clamens sources more than two tons of the best truffles - Tuber Melanosporum - from his local markets in the villages of Lalbenque and Sarlat.
